It’s no secret that cooking is not my favorite thing to do but a girl has to eat, right? To lessen my time in the kitchen, I love meals that prep easily or that can stretch over a few days. Earlier this week I share a simple shrimp and avocado salad recipe and everyone loved it, so I want share. It’s light but filling and keto friendly if you’re into that short of thing.
Ingredients:
-1/2 lb Shrimp (cooked & peeled)
-1 medium tomato diced
-1 medium avocado chopped
-1/4 cup of red onion diced
-1 tablespoon of EVOO
-Juice of one lime
-Salt and pepper to taste
-1 tablespoon of chopped cilantro (if you happen like it)
**you could also add spinach, cucumbers or other greens of your choice**
Directions:
1. In a medium bowl combine all ingredients and let them sit 5 min or so to allow the flavors to mesh together.
2. Adjust salt and pepper to taste.
3. Add cilantro (if you like) and gently toss.
