It’s no secret that cooking is not my favorite thing to do but a girl has to eat, right? To lessen my time in the kitchen, I love meals that prep easily or that can stretch over a few days. Earlier this week I share a simple shrimp and avocado salad recipe and everyone loved it, so I want share. It’s light but filling and keto friendly if you’re into that short of thing.
-1/2 lb Shrimp (cooked & peeled)
-1 medium tomato diced
-1 medium avocado chopped
-1/4 cup of red onion diced
-1 tablespoon of EVOO
-Juice of one lime
-Salt and pepper to taste
-1 tablespoon of chopped cilantro (if you happen like it)
**you could also add spinach, cucumbers or other greens of your choice**
1. In a medium bowl combine all ingredients and let them sit 5 min or so to allow the flavors to mesh together.
2. Adjust salt and pepper to taste.
3. Add cilantro (if you like) and gently toss.
This simple shrimp and avocado salad took less than 20 min to make and it was so filling. Make sure you save or pin this so that you can try it for lunch soon. If you decide to post on Instagram, make sure that you tag me so that I can re-share. #TinaToldYou
